Duck Confit When traveling in France one of my favorite foods is Duck Confit. So simple, so good! Duck Confit is usually made with the duck legs. The meat is salted and seasoned and cooked very slowly in its own rendered fat. It is then preserved and stored in the fat. When at home in My Imaginary French Village I often crave it. This is when D’Artagnan comes in. D’Artagnan is a gourmet meat store that sells duck confit along with many other meats. The duck confit comes in individual vacuum sealed packages. Duck confit can be used in a variety of ways. My favorite is a traditional way roasting it along with potatoes in duck fat. In the picture above I followed a recipe provided by D’Artagnan. It is a one pan recipe very simple and so delicious! The most difficult part was opening the vacuum sealed packaging the duck confit came in.
