Poulet rôti
Poulet rôti roasted chicken is so popular in France. All over Paris, and other cities and towns in France you will see chickens roasting in machines in the windows of the local boucheries. Underneath the poulet many times there will be potatoes cooking in the chicken fat. Delicious!
Another place you can find poulet rôti is at the many village markets. Usually there will be more than one stand with the roasting machines cooking the poulet and maybe potatoes too. Each merchant’s poulet will have a different flavor depending on the spices and flavors they use. It’s hard deciding which stand to choose. I usually look for the stand with the longest line and haven’t gone wrong. The poulet rôti and potatoes are always good and make for a perfect picnic.
In My Imaginary French Village we don’t have a Village market, and we don’t have a boucherie so I made my poulet rôti purchase at the local grocer. It’s not as good as a French one but, they do a good job. They don’t have the potatoes that are cooked in chicken fat so we are having a simple green salad with Mimi Thorisson’s vinaigrette from her braised leek recipe that I made on Monday.

Beautiful looking poulet nicely plated, like a French girl would. It triggers memories of poulet in a rotisserie on either the streets of Paris or a small French village. “Poulet, poulet , poulet” is anothe favorite line from one of my favorite movies set in the South of France, To Catch a Thief.
