Baking day came early this week in My Imaginary French Village. One of my favorite cakes is Marie-Hélène’s Apple cake from the book Around My French Table by Dorie Greenspan. This is another one of my favorite cookbooks filled with beautiful photographs and delicious recipes.
I have been raving about this cake for a long time. I made it today so I can take it to a friend tomorrow who I think will agree just how good it is. I could eat this cake all day, really! It fits in with any meal even breakfast. It’s fun and easy to make, and smells amazing while baking. It’s just the perfect cake.
It’s best to use different apples so you get the sweet and tart flavors. The cake stays super moist and can be stored easily just with plastic wrap. Don’t worry about that though. I doubt you will have much left. Thanks Dorie!

That cake looks amazing, like in a window of a patisserie. Make my mouth water thinking of the mix of sweet and tart apples with the crispy crust.
